Japanese cuisine has been gaining popularity since 2017-2019, and continued to grow during the pandemic due to its health benefits. We have seen a wide variety of Japanese ingredients and food being popular in Canada recently, such as Hojicha, wagyu and fruit liqueur.
Hamachi (Japanese Yellowtail)
Limiting meat consumption to only seafood has been a recent big diet trend, as a result restaurants have seen an increase in seafood orders compared to meat and vegetables. The Japanese Yellowtail has been attracting attention from chefs in the United States, and it could be the next seafood trend, according to an article by Total Food Service. Hamachi is described as tender but firm in texture, and its high quality, tasty fat melts in one’s mouth. Michelin-starred chefs and famous chefs of Aquavit and Veranda in NYC are beginning to create more dishes using Hamachi. Currently in Canada, most of the restaurants offering Hamachi are Japanese cuisine, but we may see a rise of non-Japanese restaurants incorporating this ingredient in their menus.
Japanese Green Tea
Demand for non-alcoholic beverages continues to grow and many restaurants have been offering Japanese green tea as a new option for sober curious diners, according to an article from JFOOODO. Many fine dining restaurants such as Sushi Noz and Sushi Nakazawa have started offering Japanese green tea with pairing menus, the reason being that it is easily paired with both sweet and savoury foods. From a business standpoint, this is beneficial as they can maintain higher average spending with customers ordering from the green tea menu if they choose not to drink alcoholic beverages.
Many restaurants have began offering Green tea in an unconventional way, which has demonstrated its versatility. Restaurant 1899 Ochanomizu is a restaurant in Japan that incorporates green tea into Western cuisines. Their signature “Matcha Red Wine” and “Matcha Beer” can be paired with their Green Tea German sausages, and Tea flavoured potato or fried chicken on the side.
Japanese ingredients including White Trevally, Wagyu and Sake were promoted in the RC Show 2022.
